Bourbon is America’s native spirit a legally defined, federally protected whiskey category that can only be produced in the United States and must meet a precise set of production requirements that no other country’s whiskey laws replicate. The story begins in Kentucky in the late 18th century, when settlers arriving in the limestone-rich river valleys of what would become the Commonwealth discovered that the region’s iron-free, mineral-rich water filtered naturally through deep limestone aquifers produced a cleaner, more consistent fermentation base than the iron-heavy water sources available elsewhere. Corn, the dominant grain crop of the American frontier, became the foundation of the mash bill. Charred oak barrels whether discovered accidentally or deliberately adopted transformed a raw grain spirit into a complex, amber whiskey that bore no resemblance to the spirit that entered the wood. By the time Colonel Edmund Haynes Taylor Jr. successfully lobbied the federal government to pass the Bottled-in-Bond Act of 1897, bourbon had already established itself as the defining American contribution to the world of distilled spirits, and Taylor’s legislation gave it the legal framework that separated quality production from adulteration for the first time in the industry’s history.
